Pink Dragonfruit Smoothie

A few years ago, I decided that it was time for me to start eating more fruit. I had recently joined Instagram and kept seeing pictures of people eating an abundance of delicious fruit every single day. They looked healthy, they looked peaceful, they looked happy. And I was ready to join them. My only problem? I absolutely hated fruit. I was already vegan, but since the decision to cut out all animal products was a purely ethical one, I saw no reason to stray away from vegan pizza and donuts (I am still very fond of both, just for the record).

Believe it or not, but before going vegan, I had never even had a mango or a watermelon. Most fruits were foreign to me and I didn’t get why people liked strawberries, blueberries or cherries. Little did I know that my taste buds were so used to processed foods that I was unable to truly taste fruit. Despite my undeniable hatred of it, I decided that I, too, was ready to be healthy and as a consequence, look peaceful and happy.

So I ventured out to buy fruit, lots of it. I got apples, mangoes, berries, kiwis, peaches, bananas, anything I could get my hands on. Somehow I thought that buying fruit would have a magical effect on me and that I would suddenly fall in love with it. The opposite happened. With every bite, I disliked it a little more. Instead of eating all the fruit I had bought, I used it to decorate my dishes. As much fun as that was, I was conscious enough of a consumer to know that I didn’t want to waste all that food. The solution I found ended up being what helped me transition to an overall healthier diet the most. I started making smoothies with my $10 immersion stick blender. As simple as that may sound, for someone like me, who was used to takeout and microwavable food only, this was revolutionary.

Nowadays, I couldn’t imagine my life without fruit anymore. Little by little, smoothies helped me appreciate, like and eventually even love it, in smoothies and by itself. I have it every day and it actually tastes amazing to me now. At the time, I didn’t know that we can easily train our taste buds to get used to new tastes. All it takes is for us to eat a little of it every day for about 10-15 days. It truly is that simple.

Pink Dragonfruit Smoothie

Serves: 1 large or 2 small servings
  • 1 cup frozen mango chunks
  • 1 pack frozen pink pitaya (dragonfruit)
  • 2 bananas
  • 1 tsp maca powder
  • 1 tbsp almond butter
  • ½ cup water
  1. Blend all ingredients until smooth.
  2. Enjoy!
You can find frozen dragonfruit at health food stores (I bought mine at my local Whole Foods) or order it online (I've ordered it from Fresh Direct before). Alternatively, you can find fresh dragonfruit at Asian markets, peel and freeze it. If you can't find it at all, feel free to use frozen berries instead.
